Merlot 2000 English
Wine composition: 100% Merlot.
Vintage: only hand-made vintage in baskets, from September 15th to the end of Sectember.
Wine-making: After taking off the grape stalks, the grape is put in oak vats, where maceration is held without temperature control and only with the natural yeasts yet on the skin of the grape berries. Maceration still goes on after the sugars exhaustion (for 40 – 60 days).
Cask aging: After the racking the wine lies in casks for about 5 years: in the meantime more than one racking could be necessary.
During this process no type of chemical preservative is added to the wine.
Racking in bottles: Racking in bottles was made without any filtration or clarification, in September 2006, in bottles of 1,50 l and 0,50 l.

ORGANOLEPTIC DESCRIPTION:
Colour: full ruby red, a bit veiled, with garnet red nuances.
Fragrance: at the beginning the wine seem to be a bit closed, but then we can discover cocoa bean and little red fruits undernotes, e.g. blackberry and Marasca cherry.
Taste: the wine has sweetly tannic, rich and complex taste, with ripe fruits notes. In the aftertaste very persistent notes of liquorice and cherry, with good persistence of the taste.
